Spinach Vegetable Vegetarian Casserole (aka Kugel)

2 sticks butter or pareve substitute

2 cups chopped onion (I use frozen chopped onion to make it easier)

2 cups chopped celery (grated in a food processor)

3 cups chopped carrots (also grated in a food processor)

1 1/2 cups matzah meal

24 ounces frozen chopped spinach

6 eggs (I use egg substitute)

1/4 cup salt-free seasoning

Mix all ingredients together and put in a casserole dish. Bake at 350 degrees for 1 hour.
